After 22 Years of Doing Business on Catalina Island, Joe and Trudy Sell Coyote Joe’s

After 33 years of serving delicious Mexican food in Avalon, Joe and Trudy Saldana have retired from the restaurant business and have sold the Coyote Joe’s to local residents Ron and Mary Bevins, who will be running the business with their son, Hugh.

Last Sunday, June 16, the Saldana’s held a farewell party for their employees, most of whom have worked at Coyote Joe’s for 20 to 25 years. It was like a big family reunion, with memories of past times being remembered, lots of good food and drink, and tearful yet joyful goodbyes and well wishes for the future.

Joe and Trudy opened Saldana’s Taco Shop in August of 1983. In the early 1990s, they remodeled the restaurant and changed the name to Coyote Joe’s. Later, an outside patio was added, and it became a favorite hangout for locals and visitors alike.

As for the big family of employees, they didn’t get too teary eyed, as the Bevins plan on keeping all the employees. Yes, all will miss Joe and Trudy, but perhaps they will stop by every now and then for a meal or just to say “Hello.” Yes, Joe and Trudy will be staying here in Avalon and have not made any big plans for the future.
